Serves 4 16g protein per serving
100g Greek style yoghurt
250g smoked mackerel
½ lemon zest & juice
2 tsp horseradish sauce
2 tbsp sunflower seeds
Freshly milled black pepper to season
1 tbsp dill chopped finely
Multi seed crackers or toast to serve
– Remove the skin from the mackerel and then flake it into a food processor with the sunflower seeds, horseradish sauce, yoghurt and lemon zest. Pulse until the mixture has a pate texture
– Season with the lemon juice and a good grinding of black pepper.
– Fold in the dill. Chill before serving.
– Garnish with sliced radish or baby capers.
